Applesauce Muffins

My roommates convinced me to start a baking club at our college! And it’s nearly official! After some paperwork and an application, we are waiting on a meeting with some board members to get official approval! But we’ve almost made it!

So today we had an unofficial meeting to bake up some applesauce muffins! Our Faculty in Residence is super awesome and is letting us use her kitchen! These are her much more professional pictures with a much fancier camera than my iPhone!

This is my first post that I’ve written and baked while at college! The last few I had already made and photographed at home. So this post is a little more thrown together but I loved being in the kitchen again!

These muffins are so easy to make and are so delicious. My mom used to bake these for us when we were little…we always liked when she made these over the Banana Nut muffins because of the sugary topping! The applesauce doesn’t add much flavor but definitely adds a ton of moisture! The real flavorful part of these muffins is the buttery, sugary, cinnamony topping!

So you take the muffins…

Applesauce Muffins
 
Ingredients
  • 2 cups Biscuit Mix
  • ¼ cup sugar
  • 1 teaspoon cinnamon
  • ½ cup applesauce
  • ¼ cup milk
  • 1 egg
  • 2 Tablespoons vegetable oil
For Topping:
  • ¼ cup sugar
  • ½ teaspoon cinnamon
  • 2 Tablespoon butter, melted
Instructions
  1. Combine biscuit mix, sugar, cinnamon.
  2. Stir in applesauce, milk, egg, and oil.
  3. Beat vigorously with spatula for 30 seconds.
  4. Spoon into greased muffin tins.
  5. Bake at 400' for 12 minutes.
  6. Cool for a few minutes.
  7. Remove from tins and dip tops in melted butter.
  8. Then dip in sugar and cinnamon mixture.
Yield: 12 regular muffins

      Oh my goodness, they are! They are also great for ravenous college students! On Sunday nights, our dorm comes together and eats baked goods… we made these and they were gone quickly!
