Bruschetta

A great, fast meal or snack with crispy toasted bread, fresh tomatoes and creamy mozzarella cheese.

First thing you need to know about me: I hate to cook actual food.

Baking is the love of my life, but ask me to make something nutritious and filling and it suddenly feels like work!

Unfortunately, eating something besides cookies, cakes, and brownies is necessary every now and then. When the time does come to eat actual food, I don’t want to be standing over it for an hour waiting for it to be edible. I have that patience for cookies and cakes but not for meals.

So fortunately, this recipe could not be any easier! It’s only four ingredients and takes 15 minutes tops. Plus it has mozzarella cheese, which I personally believe is the best cheese in the entire world!

To start, grab some sort of baguette (I use Ciabatta bread from Stop and Shop) and cut 5 slices. Rub olive oil on both sides. The oil will give the bread that nice crispy crunch that fresh garlic breads have.  Stick the oiled bread on a griddle over medium heat.

Toast the bread until it has nice light brown marks on one side and then flip and toast until the same is on the other side. This will take 8-10 minutes. If you like garlic, cut a peeled garlic clove in half and rub the fresh cut edge on one side of the toasted bread.

While you are waiting for the bread to toast, cut up cherry tomatoes into quarters. Also, cut up about 1/3 of an 8 oz ball of fresh mozzarella cheese into ¼ inch cubes. Spring for the fresh stuff …do not use grated mozzarella or the kind you buy in a stick. Toss the mozzarella and tomatoes together in a bowl. You could also add some chopped up fresh basil… but I’m not a huge basil fan.

When the bread is done, pile up the mozzarella and tomatoes on top and enjoy!

This is a great fast meal or an impressive appetizer for a dinner party!

Bruschetta
 
Ingredients
  • 1 to 1.5 Tablespoons of Olive Oil
  • 5 slices of Ciabatta Bread (or a baguette)
  • 20 (approximately) Cherry Tomotoes
  • ⅓ of a fresh 8 oz. mozzarella cheese ball
Instructions
  1. Rub olive oil on either side of your slices of bread. Put the slices on a griddle over medium-low heat. Toast for about 8-10 minutes or until the bread has nice brown marks.
  2. Cut the cherry tomatoes into quarters and the mozzarella into ¼ inch slices. Toss the tomatoes and cheese together in a small bowl.
  3. Pile the tomatoes and cheese on top of the bread.
  4. Voilà!
