Nutella Cheesecake BarsIt’s my sister’s birthday, so I made one of her favorite treats today… Nutella Cheesecake Bars! Happy Birthday Kelly! My sister is the best big sister… she edited my college essays long distance, she helps me with subjects she hasn’t thought about in 5 years, she is my golfing buddy, she will dance to and sing (off-key) “Country Girl”  and “Play Something Country” in the car with me, she loves iced Chai tea from Starbucks, she joins in with my goofy faces for pictures, and she has been my role model since we were little, when I would always choose the same candy bar as her because she just made the best decisions!

I think you can see what I mean about the goofy faces! Love you sis!

So these cheesecake bars can’t get any better…I mean they have nutella and cheesecake….need I say more? I like these cheesecake bars because you don’t need a springform pan and you don’t have to commit to a whole piece of cheesecake….not that that’s a bad thing!

The hardest part of this recipe is getting a pretty swirl. After you have made the crust and filling, warm nutella by putting it in the microwave for 15 seconds and then spoon over the filling in strips.

Nutella Cheesecake Bars
 
Ingredients
Crust:
  • 1½ cups graham cracker crumbs
  • 6 Tablespoons melted butter
  • ⅓ cup granulated sugar
Filling:
  • 16 oz. cream cheese, softened
  • 1 egg
  • ¼ cup granulated sugar
  • 2 teaspoons vanilla
  • ⅓ cup Nutella, slightly warmed*
Instructions
  1. Preheat oven to 350°F and line an 8x8 pan with aluminum foil.
Crust:
  1. Mix graham cracker crumbs, butter, and sugar until combined.
  2. Press mixture into pan.
  3. Bake for 5 minutes and let cool while you make the filling.
Filling:
  1. Beat cream cheese, egg, sugar, and vanilla with a mixer until there are no lumps.
  2. Pour filling on top of the crust.
  3. Spoon nutella in strips on top. Using a knife swirl the nutella into the cream cheese filling.
  4. Bake for 30-35 minutes, until set.
  5. Allow to cool.
  6. Put the bars in the fridge to chill for at least 3 hours.
  7. Cut into squares and serve chilled.
  8. Voilà!
Store bars in fridge.
Yield: 25 bite size bars
Notes
* Warm nutella by putting it in the microwave for 15 seconds.
