Rub olive oil on either side of your slices of bread. Put the slices on a griddle over medium-low heat. Toast for about 8-10 minutes or until the bread has nice brown marks.
Cut the cherry tomatoes into quarters and the mozzarella into ¼ inch slices. Toss the tomatoes and cheese together in a small bowl.
Pile the tomatoes and cheese on top of the bread.
