A couple of days ago, I got the crazy idea into my head that going gluten free would be a good idea. The past couple of days have been rough to say the least. My mom and brother went gluten free and didn’t feel as tired so I thought that it would be nice to be more awake, but the hunger from not eating real food and the exhaustion from trying to find something to eat has replaced any energy boost I might have gotten! To further my stupidity, I gave it up the day before a golf tournament…not my wisest moment. Starving, irrratible, ravenous, cranky, and starving a few more times aren’t good qualities to try to swing a metal club with. Surprisingly, I played my best tournament thus far! I guess I should start fasting before tournaments.

Well I’ve allowed myself a cheat in my torturous gluten freeness, and it was spent all on this!

I found this recipe on Sally’s Baking Addiction….”you had me at hello”….okay actually “half baked”…. but Name That Movie!! Jerry Maguire! I apologize for my movie quote.

These are practically a blonde brownie topped with cookie dough. Have I sold you yet? I mean it has edible cookie dough….not that cookie dough’s unedibleness has ever stopped me. I’m a wild cookie dough eatin’ teenager who’s living on the edge.

So to make your life easier dip the cookie dough into the muffin pan using a scooper. Mine is size 70. Then press the cookie dough down into the pan using your fingers. This way you get nice flat tops.

I again used the scooper to put the cookie dough on top. You could use a knife, but I wanted them to look like when you put cookie dough on baking sheets to bake.

Half Baked Chocolate Chip Cookie Cups
 
Ingredients
Cookie Cups:
  • ¾ cup butter, softened
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 2 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1¼ cup chocolate chips
Cookie Dough:
  • ¾ cup butter, softened
  • 1 cup and 1 Tablespoon brown sugar
  • 2 teaspoons vanilla
  • 1½ cups all-purpose flour
  • ¼ teaspoon salt
  • 6 Tablespoons milk
  • 1½ cups chocolate chips
Instructions
Cookie Cups:
  1. Preheat oven to 350°F and line 24 muffin cups.
  2. Cream butter and sugars until completely combined using an electric mixer.
  3. Mix in egg and vanilla.
  4. In a separate bowl, mix flour, cornstarch, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients.
  6. Fold in chocolate chips.
  7. Press about 1.5-2 Tablespoons of dough into the muffin tins.
  8. Bake for 12-13 minutes, or until they are lightly browned. Don't worry if they look a little doughy in the middle.
  9. Cool completely.
Cookie Dough:
  1. Cream butter and sugar together in an electric mixer.
  2. Add vanilla.
  3. Beat in flour and salt.
  4. Stir in the milk until the dough is completely combined.
  5. Fold in chocolate chips.
  6. Using a scooper, mound the cookie dough on top of the cookie cups.
  7. Voilà!
Frosted cookie cups must stay refrigerated.
